Learn to Cook Flavorful Lomi – Chicken Noodle Soup Recipe
Lomi , a favorite Filipino noodle soup that characterized by a flavorful thickened broth and tasty thick noodle. It is one of many variation of pancit noodle recipe, a Chinese popular recipe known as chowmein. Among on its group are panic bihon, pancit canton, mami (beef or chicken), pansit palabok and lots more. Lomi is more comparable with mami as the both noodle recipe has a broth. With lomi, we can always use pork and chicken as meat ingredient alternately. It is also recommendable to add chicken or pork liver to add extra flavor for the recipe. There is a place in the Philippines that become so popular for their Lomi recipe, you could always find small eatery along the highway selling Lomi as their specialty recipe, it is popularly known as Loming Batangas. You could always see a lots of people especially traveler and tourist dining in their small and modest eatery. The taste of their Lomi is much different and tastier compare with my Lomi, I used the same ingredient that they use but it seems that there is always a different. I just heard that the secret is behind how they prepare the noodle. My Lomi might be less appetizing compare with them but it still worth trying as I believed that it second from the best. Want to taste and learn how I prepare Lomi, follow my step by step procedure.
Lomi Ingredient for Cooking:
1 kg of Lomi
¾ chicken breast
350 gram chicken liver and gizzard (clean thoroughly, slice)
2-3 tbsp minced garlic
1 whole onion
3-4 stalk of kintsay
4 pcs tokwa (tofu)
100 gram cabbage, shredded
1 medium size carrots, peeled and julienne
Vetsin
1`Chicken cube seasoning
½ tbsp ground pepper corn
3-4 tbsp butter (heaping)
2-3 tbsp Patis (Fish sauce)
Salt to taste
½ cup of cornstarch dissolves in ½ cup of water (slurry)
Lomi Noodle Soup Direction For Cooking
In a casserole, bring to boil 1 liter of water, include Lomi noodle, bring to boil, drain using a strainer and wash with running water, set aside. In same casserole, bring to boil chicken with a tbsp of salt, simmer for 15 minute, cool and flake, set aside. Heat pan, then add butter to melt then sauté garlic, onion. Add carrots, Chicken, chicken liver, tofu , gizzard, add 2-3 tbsp of fish sauce, cover and simmer for 5-10 minute. Add chicken stock (liter) and bring to boil, add salt to taste, chicken seasoning, ground peppercorn, vetsin, cabbage and noodles. Let it boil and slurry to thicken, lastly add Kintsay (Chinese celery). You could also use pork meat instead of Chicken fo meat ingredient. Served newly cook Lomi while it is hot with soy sauce, chili with calamansi on a saucer as flavoring, enjoy.
